Did you know that September is National Breakfast Month?
I happen to adore breakfast – sometimes I even fall asleep with a smile because I am looking forward to breakfast! Here at SWH, we’re going to celebrate National Breakfast Month by featuring some of my all time favorite quick, healthy breakfasts. First up:
As the name suggests, this meal combines bananas and eggs, but what you might not know is that this is one of the tastiest ways you can start your day. (Or end it, as it’s one of my go to BFD – Breakfast for Dinner – meals, too). It’s like…a french toast flavored pancake scramble!!! How the world does not know about this breakfast shining star is baffling to me – it’s SO GOOD! This is the ultimate quick healthy breakfast – so yes, please try this at home.
Since I haven’t been able to come up with a better name, I just refer to the dish as “banana eggs,” and when I tell people about it, I usually get a look that has “EW” written all over it – until they try it. Banana eggs has won over every single skeptic who has taken a bite. I first learned about this delicious creation from Kylie (woah, does this girl serve up some seriously healthy yumminess!) and have been enjoying it at least a couple mornings a week for some time now.
If you’re looking for a new quick, wicked healthy breakfast that will rock your world, this one’s for you. PS – it’s gluten, grain, and dairy free!
1 ripe banana (peeled and microwaved for 1 min)
2 egg whites
healthy sprinkling of cinnamon
dash of vanilla
half a stevia (or sweetener of choice – natural is best!)
1. combine all ingredients
2. pretend your mixture is scrambled eggs and GO!
3. Top with nut butter, fruit, coconut, choco chips, or other selections. But, amazing au natural with no add-ons, too!
**Notes: I like to wait until the bottom gets browned in the pan before scrambling up. You can also make like a pancake and FLIP!
