WIAW: Healthy Eating When Working From Home Edition!


Hi friends!
How goes it? Hope you’re having a good week so far!

Since we moved to a new town, I had to leave my job at the gym, so currently, I’m only working from home! I’m looking for another part time gig to supplement my teaching income…and get me out of the house! But for now, working from home it is!

There are certain perks to this set up – one of them is that I can prepare healthy meals all the livelong day! (On the other hand, the fridge and pantry are alwayyyys calling to me and my jar of PB is always available for another spoonful.)

My eats are pretty similar day to day, with a few variations here and there. This is what works for me!

Morning meals are my favorite and I always wake up looking forward to a big cup of coffee and my overnight oats! No better way to start the day!

Breakfast is usually around 7:30 or 8 and then I head to the gym to get in the day’s workout. I love working out in the mornings! Sometimes, like yesterday, I teach first thing in the morning, though, and I have to work out a little later.

Note: I wanted to show off my pedicure that I got for my non-trip to Savannah. Since it’s still boots here, I didn’t want my pedi to go to waste!

Usually, I have a post workout / mid morning snack around 10:30 but yesterday I headed right to the gym at 9:30 after I taught some early classes.

I did some steady state cardio to relieve some stress and let my sore muscles recover! It was much needed.

I was starving by the time I left the gym, so as soon as I got home, I fixed myself a big pile of an egg, veggie, and tortilla scramble with some cheese around 11:15. This is one of my favorite lunch time meals!

I also had a nibble of a Nutty Bar that I snuck from Dan’s armory when we stopped by there on Monday. These things are ridiculous. Tell me you’ve tried them!

I had a free afternoon with some classes scheduled in the evening, so I headed to Market Basket (love that store) for a MAJOR grocery haul. Our fridge was bare. Yikes.

Talk about a wicked healthy buggy!

Strawberries were buy one get TWO free, so of course I was all over that. I decided to whip up some strawberry coconut flour muffins for an afternoon snack. I haven’t made anything new in the ol’kitch for farrrrr too long!

They came out pretty tasty, although I think it’s a fact that juicy strawberries can make anything taste like heaven?!

This was one of those random times that I changed it up a little bit! Usually I nosh on some veggies and hummus or tuna salad in the afternoons. It was a nice change up!

After snack time, I got to work on some emails and started this post. Dan came home from a training and we headed out to take the dogs on a walk. Unbeknownst to us, it was sleeting outside so it was a total fail!! Sorry, pups. It was wet and cold and altogether not the fun little jaunt we had hoped for!

A couple of classes later I was ready to eat again! I threw together an AWESOME salad, if I do say so myself! Spring mix, romaine, chickpeas, beets, carrots, tomatoes, cukes, mushrooms, scallions, hemp hearts, chicken breast…and light Greek dressing!

I don’t mess around with salads, y’all. I LOVE them but only if there’s like a million veggies in there. Sort of like my froyo philosophy of all the the toppings – but veggiefied!

With the work day over and dinner in my belly, I let myself relax for the rest of the evening! Hot shower and Outlander were the highlights. I’m loving these books! Now that I’ve already binge watched season three of HOC and The Bachelor is over, I’m in the market for a good new show, too! What do you have for me?!

The day ended with a cup of decaf green mint tea that my mommy gifted me. There’s just something calming about hot tea, don’t you think? I’m definitely more of a tea at night kinda gal than a tea in the morning one.

And that was about it! No St. Paddy’s day eats or drinks this year – but I did kind of drool over some pics I saw of boiled dinners on the Insta!

    Haha…I went shopping too and considered taking a picture of all the beautiful produce:) Then I did other shopping..and it didn’t look so healthy, lol

    Yes working from home definitely has its advantages and challenges! That’s why I only do it half the week..I need to get out of the house (and shower and put on makeup lol) and I’m bad at forcing myself to!

    Also when you’re at home you can make all the healthy meals but spend lots of time cooking and cleaning up..and less time working haha! #firstworldprobs

    PS I love your header font! I think I used to use that one (“crushed”?) and it’s so fun I kind of want to switch back!

    We have the same approach to salads and froyo–alllllll the things and flavors! My problem when I was working from home was exactly yours, but even more so because our main room is attached to the kitchen so I couldn’t even go to the bathroom without passing it. BAH

    “The Americans” on FX. Best. Show. Everrrrr. You can catch up on seasons 1 and 2 on Amazon Prime (that’s what I did when I jumped on the bandwagon too late). Totally worth it.

    I don’t do tea. Just coffee. I’m born and raised, Charleston, SC, but I just don’t love tea. Hot, cold, iced, sweet. Nope. It bores me. But I’m kind of intrigued by Matcha…have you dabbled? It sounds promising.

    I have the entire Outlander set and have yet to read them. I think because I got them all at once (they were a Christmas gift), it’s a little overwhelming. I’m glad to hear you like them!

    I must admit that I’m super jealous that you get to work from home! Although on the many snow days we had this season, I got sick of being stuck inside REALLY fast.

    This makes me miss being able to cook meals at home! Now I can only cook on the weekends, and during the rest of the week it’s all pre-prepped meals in tupperwares. That tortilla scramble looks great!

    Good luck finding a part-time gig! I’ve been looking for a few weeks since I moved up here to be with Travis. It’s not easy since we are in middle-of-nowhere Alabama!

    I wholeheartedly agree! Oatmeal + Coffee + Morning = The Best. No question about it! Also, your muffins look superb, and I really want a muffin right now… even though I already had one today. Whoops!

    Favorite TV Show… right now, 30 Rock! I cannot get enough of it, and I am spending way too much of my life watching it on Netflix.
